Sometimes you just need a simple salad recipe that comes together quickly. This is all that and more and it tastes mighty delicious! I have been trying to eat more leafy greens as I feel like I’ve been missing a lot of nutrients from them. I am not naturally a veggie girl and if I could, I would probably eat pizza for every meal. Okay, maybe not every meal. But at least a couple of times a week. Let’s be real though….my pizza days as I know them are long gone and that’s okay.
It’s interesting though how your taste buds can change over time and how you can essentially ‘re-train’ them. For instance, I have become quite content with the natural sweetness of fruit, cups of bone broth, and a side of sautéed kale in the mornings. With a quality protein too of course! Isn’t it funny how things can change for the better?
It is with that in mind that I bring you this grapefruit, avocado, and toasted coconut salad. I may or may not have eaten both plates after photographing them….YUM.
1 bunch red or green leaf kale, massaged for a few minutes with 2 T olive oil
1 cup baby arugula
4 tablespoons flat leaf parsley, chopped
1/2 cup toasted coconut flakes
Your choice! I drizzled some olive oil, a squirt of fresh lemon, a clove of minced garlic, and a sprinkle of sea salt on top and it turned out great!
Layer a few handfuls of massaged kale and arugula and top with parsley, sliced avocado, sliced grapefruit, and toasted coconut flakes.
Combine olive oil, lemon juice, minced garlic, and a pinch of sea salt and whisk to combine. Pour over salad and enjoy! Want to make it a meal? Add the protein of your choice! Salmon or grilled chicken would be delicious.
