Creamy Dairy-free Hot Chocolate (Paleo with AIP option)

I have always been a serious fan of hot chocolate. This creamy dairy-free hot chocolate is no exception. The neighborhood Starbucks and I were greatly acquainted back in the day when I was hooked on my daily hot chocolate. One of the things I miss the most is dairy and this version is out of this world creamy and ultra rich. Seriously guys, it’s decadent.

Add on those extra marshmallow and pop in a christmas movie you’ll be on cloud nine, at least, I was! This hot cocoa is naturally sweetened with dates and the depth of flavor is incredible. You have my word friends, this is delicious and simple to make. So make it for your family and friends this holiday season and beyond, because as I said before, friends don’t let friends drink packaged hot cocoa.

This recipe can be made either Paleo or AIP and is delicious both ways! I should know, I recipe tested both of them 😉

First, gather your 4 ingredients and prepare the marshmallows in advance if you want them.

Blend everything in a high speed blender for 1 minute and heat over medium heat until warmed through and enjoy this creamy and delicious dairy-free hot chocolate.

Ingredients
  • 1 can additive free coconut milk
  • 5 medjool dates
  • 2 T cacao powder(sub 1.5 T of carob powderfor AIP)
  • ¼ tspn vanilla bean powder
Instructions
  1. Add all ingredients to a high speed blender and blend on high for 1 minute or until dates fully blended.
  2. Warm over medium heat and ENJOY this rich and creamy naturally sweetened decadent treat.
  3. Serve with these delicious marshmallows for an extra special treat.

AIP Peach Crumble for Two

I love all stone fruits but peaches are divine. As much as I love a big peach crisp, there is something wonderful about a dessert portioned for two. Top it with a scoop of dairy free vanilla bean ice cream and you’ve got a real winner on your hands. I have been enjoying this AIP peach crumble like none other and I know you guys are going to love it too.

First gather those beautiful peaches and slice them up!

Next, sprinkle your peaches with maple sugar, arrowroot powder, and lemon juice.

Next, combine tigernut flour, cassava flour, tigernut oil, palm shortening, maple sugar and vanilla bean powder.

And sprinkle evenly over each peach mixture

Bake at 350 degrees in a rimmed baking sheet for 30 minutes or until peaches are soft and topping is golden.

Peach Crumbles for Two
 
Ingredients
  • Filling Ingredients:
  • 2 medium ripe peaches
  • 1 teaspoon arrowroot powder
  • 1 teaspoonlemon juice
  • 1 tablespoon maple sugar
  • Topping Ingredients:
  • 3 tablespoons tigernut flour
  • 2 tablespoons cassava flour
  • 1 tablespoon tigernut oil *
  • 1 tablespoon palm shortening
  • 1 teaspoon maple sugar
  • ⅛ teaspoon vanilla bean powder
Instructions
  1. Preheat oven to 350 degrees
  2. Cut peaches in half, quarter them, and then cut those pieces in half again (giving you 16 pieces per peach)
  3. Mix cut up peaches with arrowroot powder, lemon juice, and maple sugar, stirring to combine
  4. Divide peach mixture between two 10-ounce ramekins
  5. Combine topping ingredients: tigernut flour, cassava flour, tigernut oil, palm shortening, maple sugar, and vanilla bean powder. Mixing with a fork or your hands to crumble together.
  6. Divide topping mixture evenly over each peach filled ramekin
  7. Place ramekins on a rimmed baking sheet and bake for 30 minutes or until peaches are deliciously soft and the topping is golden.
  8. Enjoy with vanilla bean ice cream for an extra decadent treat!
Notes
* Melted coconut oil may be subbed for tigernut oil

 Sipping on this as we enter into this holiday weekend. It’s a caffeine free alternative to kombucha that still has all the gut health goodness that I know my body needs. We went to a toddler art class this morning where Landon sifted sand again and again and again. He would pick up the spoon and carefully put it into the little bowls and was so focused. All that mattered in that moment was the sand and the cup and the spoon. I want to be that immersed in the moment more and more.
