Today’s recipe is PERFECT for summer—at least in my mind. Give me a popsicle and I’m a happy girl. Want to know a fun fact? I ALWAYS spell popsicle wrong—I don’t know what it is about the word but it just messes with my mind. These AIP/Paleo fudge pops are are a breeze to whip up and are utterly delicious if I do say so myself. We are leaving for Disneyland this Friday and I wish that I could pack some with me to punch on at the park. The best part about these is that they are creamy and satisfy your sweet tooth without too much added sweetener! A word of caution up front…it is ALL about the quality of your popsicle molds. Do yourself a solid and invest in a quality popsicle mold to save yourself the heartache and hassle (I know from personal experience) of a sub-par popsicle experience.
Now let’s get on to the delicious popsicles, shall we?
Then combine them all in a high powered blender or food processor to combine.
Next pour the mixture into your favorite popsicle molds (see my recommendation below)
- Place all ingredients (coconut milk, carob powder, avocado, vanilla bean powder, cinnamon, and raw honey) in a high powered blender.
- Pour mixture in popsicle molds (THESE are the ones that I use and love). Mine made 10-2.5 oz popsicles. Place popsicle sticks in immediately if using this mold or wait 2 hours to place if your mold isn't as sturdy.
- Let chill in the freezer for 8 hours or overnight and ENJOY!
